I’ve been vegan for almost 5 years and people always ask me the best questions like, “How can you afford to eat plant-based?” to “Is being vegan healthy? Aren’t you lacking vitamins and minerals?” I totally understand why people ask these questions as there is so much confusion about what’s considered healthy or affordable.
In my experience, this is the best way of eating for me. It saves me the most money, I’m healthy (says my doctor and blood tests), and the benefits to the animals and environment is a major bonus.
Here’s what I use at home to help me save money on groceries:
- Plant-Based On A Budget Cookbook
- Meal prep containers
- Shop using Walmart Grocery Pickup (Walmart has the cheapest produce and vegan food)
- Ibotta is a cash back app that gives coupons/cash back on groceries. They often have Beyond Meat and other vegan meat, cheese, and plant-based items to save money on.
- I use a tofu press and cast iron to cook tofu – makes it nice and crispy.
- Vegan Meal Prep Cookbook
I like to use the same recipe a few times a week. This keeps things really simple, you can eat leftovers, and you don’t need to buy a bunch of different ingredients.
Here is a 7-day budget-friendly meal plan. Disclaimer: I am not a dietician nor nutritionist. These are recipes I enjoy on a regular basis created by amazing food bloggers. The point of today’s post is to introduce you to easy recipes to make at home to save money and time.
